Gringa Kitchen

My mom sent me the Travel Spice Kit from Grapevine Trading Company and I love it because it has all my favorite basic spices, plus a ton of international options I’ve had neither the need or nerve for buying a full-sized bottle of.
I love Americanized-Chinese takeout (which I haven’t found any of in Rio), so I’m coming up with some of my own recipes at home. For this spicy, sweet and sour chicken stir fry, I coated chicken breasts with a mixture of the Jamaican Jerk spice, Kosher Salt and Crushed Chili Flakes (I’m subbing the Chinese 5 Spice powder mixed with Cayenne Pepper now that I’ve used up all the Jerk spices!), then browned them in a nonstick skillet with a little EVOO and a handful of chopped onions.
I add a tablespoon of apricot and passion fruit jelly to simmer it in until fully cooked. Apricot jelly works fine if you can’t find this blend. Serve over steamed rice.
